BASIL PESTO

Ingredients

  • 1 cup fresh basil
  • 10ml teaspoons of grated parmesan or hard cheese
  • 10ml teaspoons of pine nuts
  • 15ml cold pressed olive oil
  • 1ml freshy squeezed lemon juice
  • Salt and pepper to taste

Method

Roast the pine nuts for 1-2 minutes on a pan until they just turn brownish. Use the chopper/grinding blade for a roughly textured pesto, or the blending blade for a smoother texture. Add all ingredients to the small (300ml) jar and blend for 10 seconds or until smooth. Serve with your favourite pasta dish or as a topping on your toast! Garnish with extra basil leaves for display. Store left-over pesto in an air-tight container.
