BASIL PESTO
Ingredients
- 1 cup fresh basil
- 10ml teaspoons of grated parmesan or hard cheese
- 10ml teaspoons of pine nuts
- 15ml cold pressed olive oil
- 1ml freshy squeezed lemon juice
- Salt and pepper to taste
Method
Roast the pine nuts for 1-2 minutes on a pan until they just turn brownish. Use the chopper/grinding blade for a roughly textured pesto, or the blending blade for a smoother texture. Add all ingredients to the small (300ml) jar and blend for 10 seconds or until smooth. Serve with your favourite pasta dish or as a topping on your toast! Garnish with extra basil leaves for display. Store left-over pesto in an air-tight container.
